Vegan Yumminess That Doubles as a Great Mid-day Snack for the Kids

Why would I post twice in one day?  That's just nuts!  And both times about food to boot.

Two words: Pumpkin Smoothie

1 can lite coconut milk (I use Trader Joe's brand because it is the only one without added stuff.)
2 frozen bananas
1 can pumpkin
1 t. pumpkin pie spice
1-2 T. maple syrup if you need it sweeter

Blend that baby up and enjoy.
Serves 4
