Blueberry, the Cook

Perhaps it is simply the natural progression of things that my little scientist should take a keen interest in inventing recipes. She concocted a delightful nutty applesauce a few weeks ago, though she was not so pleased with the addition of nuts. Ah well. Today, she invented and baked the following recipe:

Blueberry's Pear Pie (It's more like a cobbler, but she calls it a pie)

Filling
6 pears
1/4 c. white sugar
1/4 c. pure cranberry juice
1 T. cornstarch
1 t. cinnamon

Topping
1/2 c. chopped walnuts
15 Trader Joe's Gluten Free Ginger Snaps
1/4 c. flax meal
1/4 brown rice flour
1/4 c. pure cranberry juice
1/4 c. brown sugar
a few shakes pumpkin pie spice

Combine filling and put in pie plate. Combine topping and crumble on top of pie. Bake at 425 for about 20 minutes.

It turned out to be delicious!!!
